However, the skin may not crisp up as beautifully without finishing at a higher temperature at the end. Conversely, starting or finishing the roast at a higher temperature-around 425°F (220°C)-can quickly develop a golden-brown exterior, but runs the risk of drying the meat if not closely monitored.

      Weight and recipe nuances certainly influence the ideal temperature and timing.
